One 12-ounce package soft silken tofu

½ cup fresh or frozen raspberries

cup hibiscus syrup (see recipe,
page 17
)

¼ cup coconut milk

Pinch of salt

In a food processor or blender, combine all ingredients. Puree until smooth, then put your ice cream maker to work.

THE GREEN GOBLIN

Pistachios are
the
best nuts. Avocados are
the
best of whatever they are. I think they’re fruit? Yes, fruit. So I thought, “Why not team them up?” Turned out pretty darn good. And while the end product
is
green, there’s nothing really goblin-y about it. I just liked the alliteration.

Serves 4

2 ounces dark chocolate or dark chocolate chips

½ cup roasted unsalted shelled pistachios

One 12-ounce package soft silken tofu

cup plus 1 tablespoon agave nectar

1½ teaspoons fresh lime juice

¼ cup coconut milk

1 medium Hass avocado, pitted and removed from skin

Pinch of salt

Line a dish or baking sheet with parchment paper. In a medium glass or metal bowl set on top of a pot of simmering water, melt the chocolate, stirring occasionally. Stir in the pistachios. Once they are coated, remove with a fork and place them on the parchment paper, making sure they are separated so they don’t stick together. Place the pistachios in the fridge for 20 minutes, or until the chocolate hardens.

In a food processor or blender, combine the tofu, agave, lime juice, coconut milk, avocado, and salt, and puree until smooth. Then put your ice cream maker to work. Finally, stir the chocolate-covered pistachios into the prepared ice cream.

THE SAILOR’S PEANUT BUTTER RUM

Shiver me timbers! It’s ice cream that tastes like rum! And peanut butter! Sit me down in front of a
Law & Order
marathon, and I’m good to go. Nothing past the Briscoe years, obviously.

Serves 4

One 12-ounce package soft silken tofu

¼ cup coconut milk

3 tablespoons smooth peanut butter

cup Sailor Syrup (see recipe,
page 55
), plus 1 tablespoon for garnish

1 teaspoon vanilla extract

Pinch of salt

1 tablespoon chopped peanuts, for garnish

In a food processor or blender, combine the tofu, coconut milk, peanut butter, the
cup of syrup, the vanilla, and salt, and puree until smooth. Then put your ice cream maker to work. Serve it topped with chopped peanuts and a drizzle of sailor syrup.
