1 tbsp raw sugar (optional)
1. Whisk flour, baking powder, cinnamon, and salt together in a large bowl.
2. Combine non-dairy milk with maple and sugar, if using.
3. Pour wet mixture into the dry mixture and stir until just combined; a few lumps are okay.
4. Let rest for 10 minutes.
5. Meanwhile, heat skillet over very low heat.
6. Transfer mixture to a large glass/liquid measuring cup or use greased

8. Spray skillet with cooking spray and pour in

Brown Rice Pancakes

Cajun Home Fries

| These spicy home fries are ridiculously addictive. You'll be popping them in your mouth while plating other food and “accidentally” leaving a few on the tray in the kitchen so you can go back for more in secret.
2 medium russet potatoes,
diced
about 2 tsp granulated garlic powder
about 2 tsp granulated onion powder
about 1 tsp onion flakes

tsp paprika
cayenne powder, to taste
salt, to taste
pepper, to taste
1. Preheat oven to 400°F. Grease cookie sheet and set aside.
2. Place potatoes in a mixing bowl.
3. Spray with cooking spray and sprinkle spices over top. Be generous with garlic and onion, but do not use too much cayenne or paprika. Add salt and pepper.
4. Mix to evenly coat. Re-spray and repeat.
5. Transfer to cookie sheet, making sure there is no overlap.
6. Bake for 15 to 25 minutes, or until fully cooked and crisp.
Herbed Home Fries
Serves 4

| These add a great contrast to brunch foods like Tofu Scramble (pg. 18), but they're also a great mashed-potato alternative.
