INGREDIENTS

1 cup cashews

dash sea salt

4 to 5 zucchinis, sliced into pieces ⅛- to ½-inch-thick

1 teaspoon cayenne pepper

1 cup tamari

DIRECTIONS

To make the sour cream, blend the cashews with 1 cup water and a dash of sea salt, starting with about ½ cup water, and slowly adding more until it reaches the consistency of heavy cream.

Pour into a pint jar. Cover with cheesecloth, or something similar, to allow air to circulate freely. Let sit for 8 hours or more. The cream is ready once it tastes sour and tart, and is covered in a gray film. Skim the film off with a spoon, then cover and refrigerate the sour cream.

Marinate the zucchini in cayenne, tamari, and enough water to cover, for at least 15 minutes.

Spread the zucchini slices onto dehydrator trays, and top with a dollop of sour cream. Dehydrate 12 hours at 105°F or to desired consistency. They won’t get crunchy, but should be nice and firm.

1 banana

2 tablespoons tahini

DIRECTIONS

Blend the banana and tahini with 1 cup of water and serve.

INGREDIENTS

1 to 2 bananas

3 to 5 pitted dates, soaked in 1 cup water for 20 minutes (save soak water)

1 cup fresh or frozen strawberries

½ cup fresh or frozen raspberries

1 cup fresh orange juice

DIRECTIONS

In a blender, purée at least 1 banana, the dates with their soaking water, the fresh or frozen strawberries and raspberries, and the orange juice. Thin the mixture with more water or thicken it with more banana to suit your taste.

Serve in attractive glasses.

INGREDIENTS

romaine (3 small heads)

1 bunch parsley

1 small celery heads

1 cucumber

½ bunch radish (w/ leaves)

2 tomatoes

1 lemon (w/ skin)

1–2 garlic cloves

¼ teaspoon cayenne

1 teaspoon maca (optional)

1 teaspoon mesquite (optional)

DIRECTIONS

Cut all the ingredients in half and juice. After juicing is finished sprinkle in cayenne, maca, and/or mesquite to taste into your juice. Enjoy!
