Quick Queso Sauce
Makes 1 cup

| It's okay to go at this sauce with a spoon. I won't judge. It's also great with nachos, burritos, enchiladas, or inside a black bean quesadilla.
1 c non-dairy milk

c nutritional yeast
2 tbsp whole-wheat flour
1 tsp granulated onion powder

tsp granulated garlic powder

tsp ground cumin

tsp chili powder or cayenne (optional)

tsp salt, or to taste
CHEF'S NOTE:
A gluten-free flour or blend may be substituted for the whole-wheat flour.
1. Whisk all ingredients together in a saucepan.
2. Bring to a boil over medium heat, stirring often until thick.
3. Serve immediately.
VARIATION
Quick Mexican Queso Sauce
Add 1 10-oz can of Rotel tomatoes with green chilies; leave chunky or puree in a blender before heating.

Cheddar Cheesy Sauce

| This is my favorite cheese sauce recipe. It's perfect on pasta when you're in the mood for mac ‘n' cheese, but it's also fantastic over potatoes au gratin or steamed vegetables. One night, when my fridge was lookin' pretty empty, I poured this sauce over sweet potato slices and vegan chorizo, baked it, and ended up with one awesome casserole.

2 tbsp cornstarch
1 tsp granulated onion powder
1 tsp granulated garlic powder

2. Bring to a boil over medium heat, then reduce heat to low, stirring frequently until it thickens slightly.

Nacho Cheese Sauce

, you're in for a real treat with this fat-free sister version. It's still rich and cheesy like the original recipe but slightly spicier and ultra-healthy.
1 c non-dairy milk

3 tbsp rolled oats

powder

c mild salsa
2 tsp yellow miso
2 tsp cornstarch
1 tsp lemon juice (optional)
1. Combine all ingredients into a food processor or blender and whiz until smooth and mostly homogenous.
2. Transfer to a saucepan and cook over medium heat, stirring frequently until it's thick and cheesy.
3. Taste, adding lemon if desired.
