Cauliflower Muffin
Moist muffins that is good with a cup of milk to drink with! A simple dessert for people that want a quick dessert!
Yields:
Makes 6 Servings.
Ingredients:
2 cups Steamed cauliflower
1 cup Egg whites
¼ cup Coconut flour
¼ cup Wheat flour
1 tbsp. Chopped toffee
1 tbsp. Vanilla essence
Method of Preparation
:
- Preheat the oven to 320
°F.
- Combine all the ingredients into a bowl and set it aside.
- Using a muffin pan, pour the mixture ½ way of each muffin hole. Bake for 30-35 minutes.
- Take the muffin tray out of the oven and allow it to rest for 10 minutes before serving. Enjoy!
Chocolate Chip Banana Cauliflower Muffin
Moist and chocolaty muffins thanks to the bananas and cauliflower. An amazing dessert even the children will love and eat it all up completely!
Yields:
Makes 10-12 Servings.
Ingredients:
2 ½ cups Self-rising flour
½ tsp. Baking soda
½ cup Brown sugar
1 cup Semi-sweet chocolate chips
2 Eggs, beaten
½ cup Whole milk
¼ cup unsalted butter, melted
2 Bananas, mashed
1 ½ cup Steamed cauliflower, mashed
Method of Preparation
:
- Preheat the oven to 400
°F.
- Using a muffin tray, place 12 muffin cups on each muffin hole. Set the tray aside.
- Using a bowl, sift together the dry ingredients into a bowl and ½ of the chocolate chips. Set it aside.
- In another bowl, combine the eggs, milk, butter, cauliflower, and bananas. Mix them together until they are well combined. Pour the dry ingredients into the wet ingredients bowl and mix until they are well combined.
- Spoon the batter onto each muffin cup 2/3 full. Sprinkle the remaining chocolate chips on each cup and bake for 15-20 minutes.
- Remove the tray from the oven and allow the muffins to rest at least 5 minutes before serving and enjoy!
Cauliflower and Banana Bundt Cake
Another moist banana cake that will make for an amazing creamy taste that your mouth will keep begging for more!
Yields:
Makes 8 Servings.
Ingredients:
1 cup Steamed cauliflower, chopped
2 Bananas, mashed
Dry ingredients:
3 cups All-purpose flour
2 tsps. Baking powder
1 tsp. Baking soda
½ tsp. Salt
1 ½ tsps. Ground cinnamon
1 tsp. Ground nutmeg
1 tsp. Ground ginger
1 cup White sugar
Wet ingredients:
¾ cup unsalted butter, softened
2 Eggs
2 tsps. Vanilla extract
¾ cup Buttermilk
Method of Preparation
:
- Preheat the oven to 350
°F.
- Lightly butter a Bundt pan. Set it aside.
- Combine the cauliflower and mashed bananas into a bowl and set it aside.
- Sift all the dry ingredients into a bowl and set it aside.
- Using another bowl, combine the wet ingredients and whisk them until they are well combined. Set it aside.
- Pour ½ of the dry into the wet mixture and whisk until they are well combined. Pour the rest of the dry ingredients and whisk again. Pour the cauliflower & banana mixture. Mix until well combined.
- Pour the cake mixture into the prepared Bundt pan. Bake the cake for 1 hour. Use a toothpick to test if your cake is cooked.
- Take the pan out of the oven and allow it to rest for 10 minutes before serving. Enjoy!
Chocolate Cauliflower Dessert Pizza
A chocolate version of the pizza dessert recipe! The amount of goodness in this pizza is doubled with the help of cocoa powder and chocolate chips!
Yields:
Makes 8 Servings.
Ingredients:
½ cup Cauliflower puree
¼ cup Almond flour
¼ tsp. Salt
¼ tsp. Cinnamon
¼ cup Cocoa powder
3 tbsps. Maple syrup
2 tbsps. Coconut oil
½ tsp. Vanilla extract
1 Egg
¼ cup + 2 tbsps. Butter
1 Banana, sliced
¼ cup Chocolate chips
Method of Preparation
:
- Preheat the oven to 425
°F.
- In a large bowl, combine the cauliflower, flour, salt, and cinnamon. Set them aside.
- In another bowl, combine the cocoa, syrup, coconut oil, egg, and vanilla extract. Set it aside.
- Combine the cauliflower mixture with the chocolate mixture and set it aside. Reserve 2 tbsps. of the chocolate mixture.
- Using a baking tray lined with parchment paper, pour the pizza dough and spread it evenly to form a 9” circle about ¼” thick.
- Bake the dough for 10 minutes and allow it to rest for 10-15 minutes. Spread the butter on top of the crust and sprinkle the banana, and chocolate chips. Drizzle the reserved chocolate mixture and serve. Enjoy!
Peanut Butter, Banana & Cauliflower Muffin
Peanut butter and banana muffins so moist and so tasty that you’ll think it was your usual peanut butter and banana sandwich!
Yields:
Makes 4 Servings.
Ingredients:
1 cup Brown sugar
½ cup Peanut butter
½ cup Banana puree
½ cup Cauliflower puree
¼ cup Pineapple puree
1 Egg
1 cup Whole wheat flour
¼ cup Flax seed meal
1 tsp. Baking powder
1 tsp. Baking soda
½ tsp. Salt
Method of Preparation
:
- Preheat the oven to 350
°F.
- Using a muffin tray, place muffin cups on each tray and set the tray aside.
- Combine the peanut butter, pineapple, banana, and cauliflower puree. Mix until they are well combined. Then add the egg. Mix again. Set it aside.
- In another bowl, combine the flour, baking powder, baking soda, salt, and flax. Pour it into the cauliflower mixture. Mix until the mixture is lumpy.
- Pour the muffin mixture into each muffin cup 2/3 of the way. Bake the muffins in the oven for 20-25 minutes. Allow the muffins to cool for 10 minutes. Serve and enjoy!
Chocolate Avocado Cupcakes with Cauliflower Frosting

To make the cupcake batter:
1 tbsp. Canola oil
1 cup Avocado puree
1 ½ cups White sugar
1 cup Whole milk
2 tsps. Vanilla extract
½ tsp. Balsamic vinegar
2 Egg whites
2 cups All-purpose flour
½ cup Cocoa powder
1 tsp. Baking soda
½ tsp. Salt
To make the frosting:
1 packaging (8 oz.) Cream cheese, softened
½ cup Confectionary sugar
¼ cup Cauliflower puree
2 tbsps. Vanilla extract
1/8 tsp. Salt
Method of Preparation

- Preheat the oven to 350
°F.
To make the cupcake batter:
- Using a muffin tray with 12 muffin holes, line them up with muffin cups. Set it aside.
- Using a large bowl, combine the avocado, sugar, milk, vanilla, and balsamic vinegar. Mix until they are well combined. Add the egg whites and combine. Set it aside.
- Combine the flour, cocoa powder, baking soda, and salt. Combine the avocado mixture into the flour and mix until they are well combined. Set it aside.
To make the frosting:
- Combine all the ingredients into a bowl and set it aside.
To complete the dish:
- Pour the muffin batter into each muffin cup and bake them for 15-20 minutes. Allow the cupcakes to cool,

½ cup Semi-sweet chocolate, chopped
¾ cup Whole wheat flour
½ tsp. Baking soda
1 tsp. Baking powder
½ tsp. Salt
1 Egg
Method of Preparation

- Preheat the oven to 350
°F.
- Grease a 9” baking dish. Set it aside.
- Combine the cauliflower, milk, vanilla, oil, cocoa powder, egg, and sugar. Set it aside.
- Melt ½ of the chocolate and combine it to the cauliflower mixture.
- Combine the flour, baking powder, baking soda, salt. Combine the cauliflower mixture until there are no lumps. Pour the remaining chopped chocolate.
- Pour the cake mixture into the prepared baking dish. Bake for 30-35 minutes. Allow the cake to cool before serving and enjoy!

½ cup All-purpose flour
1 tsp. Baking powder
½ tsp. Baking soda
¼ cup Cocoa powder
1/3 cup Brown sugar
½ cup Whole milk
2 ½ cups Cauliflower puree
1 Egg
1 tbsp. Vanilla extract
3 tbsps. Coconut oil
To make the frosting:
2 cups Semi-sweet chocolate chips
1 cup Coconut cream
Method of Preparation
:
- Preheat the oven to 350
°F.
- Using a muffin pan that has 12 muffin holes. Line each hole with muffin cups. Set it aside.
To make the cupcake batter:
- In a bowl, combine the flours, baking soda, baking powder, cocoa, and brown sugar. Set it aside.
- In another bowl combine the milk, cauliflower, egg, vanilla extract, and coconut oil. Pour the flour mixture and mix until they are well combined.
- Pour the cake batter into each individual muffin cup evenly and bake them in the oven for 20-30 minutes.
To make the frosting:
- Combine both ingredients into a bowl and microwave it until the chocolate chips have melted. Freeze them for about 10-30 minutes or until the consistency of frosty ice cream. Set it aside.
To complete the dish:
- Allow the cupcakes to rest for 5 minutes before serving.
- Using the frosting, place it in a piping bag and squeeze it on top of each cupcake. Serve and enjoy!
