Dear Reader,
Baking is one of my very favorite activities. I grew up in a family with a
strong tradition of cooking and baking at home. Happily those traditions
and recipes have been passed down to me. One of my fondest memo-
ries is of my mother teaching me how to make my first apple pie from
scratch. Step by step she showed me how to measure out the flour, rub
in the butter, and slice the apples just like her mother had taught her. It is
a skill I have perfected with time, and I can still hear my mom’s instruc-
tions every time I make an apple pie today.
I hope in this book you find tips, recipes, and information that will
make your own pie baking easy and fun. Pie is unlike anything else out
there since it comes in savory varieties as well as sweet. Be it breakfast,
