• 20 × 10cm (8 × 4in) round cake (bottom tier), 15

× 10cm (6 × 4in) round cake (top tier)

• 1.9–2.3kg (4lb 3oz–5lb 3oz) buttercream

• Paste colours: violet (Sugarflair Grape Violet),

green (Sugarflair Gooseberry), yellow (Sugarflair

Melon)

• Breakfast cereal, we have used Fruit Loops here

• Small kitchen knife

• Piping bags

• Scissors

• Small petal nozzle (Wilton 104)

• Small leaf nozzle (Wilton 352)

• Cake stand or covered cake board

Crumb coat, dowel and stack the cakes (see

Buttercream Basics) and place on a stand or

covered board. Cover both tiers with 800–900g (1lb

12oz–2lb) of plain buttercream. Give the top tier a

smooth finish (see Covering Cakes in Buttercream

Basics) and pipe ruffles on the bottom tier using

800–900g (1lb 12oz–2lb) of buttercream tinted

yellow (see Up and Down Two-tone Ruffles in

Piping

Textures

and

Patterns).

Colour

the

remaining buttercream in the following quantities:

200–300g (7–101⁄2oz) of violet and 100–200g

(31⁄2–7oz) of green. Apply the cereal loops by

following the tutorial and using the photograph as a

guide. To finish the cake, pipe a violet buttercream

flower with green leaves (see Sunflower and Leaves

in Piping Flowers) and give it a cereal loop centre.

About the Authors

Valeri Valeriano and Christina Ong left the

Philippines in 2008 to work in the UK in the

medical field. After the ‘sweet accident’ of learning 486

how to make cupcake bouquets in 2011, they

launched their business Queen of Hearts Couture

Cakes and have since won several top awards in

various prestigious cake competitions.

Now renowned globally for their edible works of art,

using nothing else but buttercream as their

decorating medium, Valeri and Christina have been

featured in numerous well-known magazines and

on local and international news. They have

appeared on television, and showcased their

masterpieces and demonstrated their craft in major

cake shows in the UK and abroad. They hold

masterclasses in the UK, Europe, Asia and the US

and have also held a couple of masterclasses at the

famous Victoria & Albert Museum, London.

Valeri and Christina take immense pride in their

mastery of buttercream art and this makes Queen of

Hearts Couture Cakes exclusive. They have

modernized what is commonly known as the

age-old art of buttercream, and this is reflected in

their creations. Their cake designs are elegant,
