White House Cookies

One of my Great-Aunt Mary Etta’s recipes. My grandmother, Ella Mae, used to make these a lot around the holidays. Love the Rice Krispies in them. They add a little extra “snap” to the recipe.

 

1 cup white sugar

1 cup brown sugar

1 cup margarine

1 cup Wesson oil

1 egg

1 tsp. vanilla

 

Mix together, then add the following:

 

3½ cups flour

1 tsp. salt

1 tsp. cream of tartar

 

Mix well and add the following:

 

1 cup Rice Krispies

1 cup coconut

1 cup oats

1 cup chopped nuts (pecans work great)

 

Mix well with spoon. Drop by teaspoonful and bake for 15 minutes at 350 degrees. 

 

 

Sausage Bread

This recipe was handed down in our family. It took some time to make and bake, so it was only made for Christmas and Easter. Now, with readymade bread dough available in the grocer’s freezer, it cuts the prep time in half! ENJOY!

 

Now, most packages of frozen bread dough comes in 5 loaves per pack, but you don't need to make them all at the first time.

 

Recipe is for 1 sausage bread (I always make all five in one day; takes 3–4 hours).

 

1 frozen bread loaf

3 links Italian sausage, hot or sweet, your choice (do
not
use breakfast sausage), removed from casing

2 hard-boiled eggs, peeled and cut into pieces (if you have an egg slicer, perfect; then cut in quarters)

¼ lb. provolone cheese, cubed

Grated Italian cheese (whatever you use for spaghetti; I use Parmesan)

 

Thaw dough overnight in the refrigerator; I leave them all in the bag. Early in the day place thawed loaves on plastic wrap sprayed with Pam (leave space between). Cover with sprayed plastic wrap, covered with a dish towel. (If your counters are cold you can put a towel under the plastic wrap.)

 

When dough has warmed to room temperature and risen (a couple of hours) you can start the fun part.

 

One loaf of bread at a time, form into a ball, then start rolling out on a floured surface, creating a round, like you’re making pizza. It doesn’t have to be perfectly round; mine never are.

 

Place ingredients on the dough, like you’re making a pizza: use 3 links of sausage, 2 hard-boiled eggs, cut into ½-inch pieces, and about ½ cup of cubed provolone.  Sprinkle with the grated cheese.

 

Roll dough like a jelly roll, and then form into a crescent shape. Make sure the edge is pointing down and place on a cookie sheet. (I usually cook two on a sheet.)

 

Bake at 350 degrees for about 40 minutes until golden brown. You can brush a little butter on the top with a paper towel (a really little bit) to make it look nicer.

 

Serve warm or cold. Wrap and freeze to save.

 

 

 

Granny’s Chicken and Dressing

My momma was the best cook ever! Everyone especially loved her chicken and dressing. She’d fix it at Thanksgiving, Christmas, Easter, birthdays, or any time one of us asked for it special. About a year before she passed away, she sat down with me and let me write it down so this delicious legacy could live on. I hope y’all enjoy it!
 

4 pans yellow corn bread (see special recipe below)

2 hens, boiled and deboned

3 boiled eggs, grated

1 green bell pepper, chopped

1 white onion, chopped

2 celery stalks, chopped

Chicken broth from hen plus cans of broth; add 1 can at a time until enough to moisten real well, plus a little extra. Should not be soupy! It can take as much as 5 cans if there isn’t enough broth from the 2 hens.

 

Cook 1½ hours at 350 degrees.  Should
not
be mushy.

 

 

Special Buttermilk Corn Bread

 

Makes 1 pan

 

1 cup yellow cornmeal

4 tbs. flour (all-purpose)

½ tsp. baking soda

1 tbs. shortening (liquid, such as canola oil)

1 egg

1 cup buttermilk

 

Cook at 425 degrees until brown on top. Make this recipe 4 times for dressing.
