In 2011, I released
Fat, Sick & Nearly Dead
, a documentary about my personal transformation from a life of over-indulgence and illness to a happy, healthy, vital state of being, all through the consumption of fruits and vegetables. When people saw how I rebooted my life with a plant-based diet, it set off
Reboot with Joe
, a movement that is now millions strong – people like you who realize that the key to increased vitality and wellbeing is as simple as eating a rainbow of plant foods every day.

The recipes in this book are what I rely on to stay well, strong and content. They are the perfect recipes for when you’re on a Reboot, and also great when your goal is to eat healthy. The properties that give each fruit or vegetable its rich color are the same elements that help protect our immune systems, keep our bodies strong and make us feel fantastic. Cooking Tips

Whether you’re on a Reboot or just looking to clean up your diet, these tips will help you stay healthy in the kitchen:

When sautéing, baking, or steaming


Use
coconut oil, extra virgin olive oil, avocado oil or low-sodium vegetable broth to add a nice flavor to your dish as well as a little moisture.


Avoid
butter, margarine, canola oil, and most vegetable oils.

When adding sweeteners


Use
stevia, pure maple syrup, or raw honey.


Avoid
white sugar, brown sugar, corn syrup, and artificial sweeteners.

Cook with the colors of the rainbow


Use
produce in a variety of colors to get a range of antioxidants and vitamins.


Avoid
processed foods like white bread, white pasta, chips, and crackers.

Add flavor the healthy way


Use
Celtic salt, sea salt, or Himalayan salt. Enhance food with bold flavors from healthy ingredients like fresh herbs, spices and citrus.


Avoid
heavily processed, fine-grain table salts and artificial flavors.
