Bring to a boil, turn down the heat and cook slowly, without quite boiling.
Bake
Preheat the oven by turning it on 10 minutes before the pan goes in.
Chill
Place the dish in the fridge (not the freezer) until chilled through.
Time
Set a kitchen timer & check after the shortest time given.
Yummy…no more waiting for the carnival to come to town! Pour the batter into a tall jar for easy dunking.
8 to 10 hot dogs
8 to 10 wooden skewers or chopsticks
1 c. yellow cornmeal
1 c. all-purpose flour
1/2 c. sugar
4 t. baking powder
2 t. salt
1 egg, beaten
1 c. milk
canola oil for deep frying
Garnish: mustard, catsup
Pat hot dogs dry with a paper towel. Insert sticks in hot dogs and set aside. In a bowl, stir together cornmeal, flour, sugar, baking powder and salt. Add egg and milk; beat until smooth. In a deep skillet over medium-high heat, heat several inches of oil to 365 degrees. Dip hot dogs in batter and add to oil, 2 to 3 at a time. Cook, turning hot dogs often, until golden on all sides. Place on paper towels to drain. Serve with mustard and catsup. Makes 8 to 10 servings.
For the crispest corn dogs, French fries and other fried foods, drain them on a wire rack that’s been set over a paper towel-lined baking sheet.
Try Japanese-style panko bread crumbs for an extra crispy crust…they’re found right next to regular dry bread crumbs.
2-1/2 c. all-purpose flour

2 to 3 sweet onions, thickly sliced and separated into rings
2 eggs, beaten
2 c. milk
1-1/2 c. dry bread crumbs
olive oil for deep frying
salt and pepper to taste
In a shallow bowl, stir together flour, baking powder and salt. Coat onion rings with flour mixture; set aside. Add eggs and milk to remaining flour mixture; whisk well. Dip floured onion rings into egg mixture; drain on a wire rack. Coat onion rings with bread crumbs. In a large saucepan, heat several inches oil to 365 degrees. Fry onion rings, a few at a time, for 2 to 3 minutes, until golden on all sides. Drain on paper towels. Sprinkle with salt and pepper; serve warm. Serves 6.
