Stir together and bring to a boil in a small saucepan and pour over cake while hot.
Pumpkin Rolls

This is a staple at our office food days. It’s good any way: warm, cold, or room temperature. There are never any leftovers!
1 8-oz. pkg. refrigerated crescent rolls
1 8-oz. pkg. cream cheese, softened
1 cup pumpkin
½ cup sugar
1 tsp. vanilla
1 tsp. pumpkin pie spice
¼ cup butter
¼ cup cinnamon sugar (¼ cup sugar mixed with 1 tsp. cinnamon)
Unroll crescent rolls and put half in the bottom of an 8 x 8-inch pan. Flatten and press any seams together.
Mix together cream cheese, pumpkin, ½ sugar, vanilla, and pumpkin pie spice by hand or with hand mixer. Spread over the crescent roll. Place the remaining half of the crescent roll on top of the cream cheese mixture.
Melt the butter and pour over the top. Sprinkle with the cinnamon sugar mixture.
Bake at 350 degrees for 30 minutes.
Pumpkin Custard Crunch

29-oz. can pumpkin
3 eggs, beaten
2 tsp. pumpkin pie spice
1 tsp. cinnamon
14-oz. can sweetened condensed milk
1 cup milk
2 tsp. vanilla extract
Crunch Topping:
Stir together oats, brown sugar, flour, cinnamon, and pecans. Add melted butter, toss to mix. Set aside.
3 cups quick cooking oats, uncooked
1 cup brown sugar, packed
1 cup all-purpose flour
1 tsp. cinnamon
1 cup pecans, crushed
1 cup butter, melted
Mix pumpkin, eggs, and spices well; stir in milks and vanilla. Pour into a greased 9 x 13-inch baking pan. Spoon crunch topping over pumpkin mixture. Bake at 350 degrees for 45–60 minutes, until knife tip comes out clean. Watch carefully so topping doesn’t burn. Serve warm.
Tasty topped with whipped topping or a scoop of vanilla ice cream.
Aunt Lena’s Apple Crunch

Peel, core, and slice about 5 good-sized apples into a large bowl; add ¾ cup sugar, 1 tsp. cinnamon, toss together until the apples are well coated. Place in a 9 x 9 baking dish and dot with 1 tbs. real butter.
Crunchy topping:
Mix together with a fork until these ingredients make a crumble mixture: ½ cup flour, ½ cup sugar, 1 tsp. baking powder, 2 tbs. real butter, and 1 egg.
Spoon the topping on the apple mixture, bake at 350 degrees for 30–35 minutes.
Note: While most old farmhouses had McIntosh apple trees in their yards, I prefer to use a combination of Gala or Braeburn with Cortland. The macs tend to bake up pretty soft, where the Gala/Braeburn will cook tender but not mush.
This recipe will work well with peaches. You may even try it with other fruits. A little experimenting with the dry ingredients may be necessary. You will need to put the baking dish on a cookie sheet or such as peaches and berries will cook over the edge of the dish. Who wants to spend time cleaning the oven when you should be eating this yummy treat?
